If you're craving authentic Texas-style barbecue right in the heart of Rexburg, Sparks Barbecue is the must-visit destination. Nestled conveniently at 150 W Main St, Sparks Barbecue delivers a mouthwatering experience centered around smoked meats that boast bold flavors and tender textures that melt in your mouth.
Their menu highlights are a carnivore’s dream. The brisket sandwich stands out with juicy, richly seasoned meat layered perfectly within fresh bread, creating a symphony of smoky, savory goodness. The pulled pork is another crowd favorite—succulent and expertly smoked to achieve that fall-apart tenderness that makes every bite satisfying. For those wanting to mix things up, the Brisket Cheddar Sausage offers a unique blend of smoky brisket and sharp cheddar enveloped in a perfectly seasoned sausage casing. Complementing these hearty mains, the sides at Sparks Barbecue elevate the meal to complete comfort food territory: creamy Mac & Cheese made with real cheese, the surprisingly addictive lightness of their coleslaw, and the rich, delicate texture of their polenta.
No barbecue experience is complete without a drink that matches the intensity of the flavors. The selection here includes classic soda standouts like the Mexican glass-bottled Coke made with real cane sugar, along with refreshing specialty sodas like Boylan’s Black Cherry and the zesty Ginger Beer Cock & Bull. Each sip pairs perfectly with the smoky spices and tender meats.
Finish your meal on a sweet note with their signature Key Lime Pie, a true highlight for dessert lovers. Crafted with a perfectly crumbly graham cracker crust, topped with whipped cream and fresh lime wedges, this pie provides a tart, creamy contrast that balances the heaviness of the barbecue. For chocolate lovers, the Chocolate Mousse Pie is equally irresistible with its velvety texture and rich chocolate flavor.
Stepping inside Sparks Barbecue feels like escaping to a rustic Texas smokehouse infused with a modern, welcoming vibe. The atmosphere is relaxed and lively with a tasteful soundtrack of country music that sets the perfect backdrop for gatherings of friends or casual date nights. Customers frequently praise the warm and attentive staff who are not only friendly but also eager to help you navigate the menu with genuine recommendations tailored to your tastes.
Regular diners rave about the authenticity and quality of the barbecue here. Jace Meyer describes it as "a great spot" where the brisket is "tender and very flavorful," while Brina Brinkerhoff appreciates the smell of smoked meat and the "fabulous" service on her second visit. The balance of bold smokiness with tender textures comes through in every bite, capturing the spirit of true backyard BBQ without leaving Idaho. Furthermore, Sparks Barbecue offers fantastic value, especially notable on deals like the $19.99 two-person meal that Isaac Parker found to be "fantastic" with hearty portions.

Sparks is a great spot here in Rexburg! The vibe makes you feel like you’re in an authentic Texas style bbq restaurant which I love! The staff was very helpful in giving recommendations as well. The meat was delicious! I love brisket and it did not disappoint, it was tender and vary flavorful. Same thing with the ribs as well, we tried both the sweet and savory and they were both good but I prefer the savory. Same thing with their bbq sauces. The sides were very good as well. The Mac and cheese was very cheesy and cooked well. The corn bread had a good flavor but was a little dry for me. We tried the Elote corn as well which I wasn’t the biggest fan of, but my wife loved it. This is definitely a great spot in rexburg and I will definitely be coming back!
The smell of smoked meat is amazing! We ordered the family meal which was more expensive than we originally thought because of a slight miscommunication (probably a new employee) but price aside the food was great! I do wish they had a few more kids options. This is a good place for date night My second experience here was even better- the service was fabulous and the meat as always was delicious.
This place is amazing! I’m kind of a spice boob so I have delayed trying Sparks simply because of their logo (which is rock star awesome btw). The food was really good, and the service was amazing! Elijah and Adam were friendly and helpful and very fun! The atmosphere is cold-shin style but modern and quite comfortable. Relaxed with country music playing (a bit loudly but it was close to closing time). Overall, my experience of Sparks tonight will bring me back soon! Thank you guys! PS… the vacuum just made its rounds pretty much ruining the atmosphere altogether. Still 40 min til close….
We were greeted by friendly staff and this food is incredible! No wait time and a clean dining area. We stopped passing through town and wish we lived here. Highly recommend the pulled pork and brisket... It was to die for!
Went to Sparks on a coupon for $19.99 for 2 people.(Everything in Photo). For that price what you get is fantastic value and the meats were very solid. Staff was great and it is a nice building. This is casual backyard BBQ in rexburg. You should definitely give it a go atleast once. To be transparent the only reason I gave 4 and not 5 stars was the sides we had. They are nothing special and is what I would expect at that price but for what is usually I believe $20 a person meal, sides could see an improvement or atleast the ones we tried. Still a great place, and if you just want meat you cant go wrong here.
We stayed at Sew Delightful B&B, and our host Ruth highly recommended Sparks Barbecue. We came from Vancouver and visited in the afternoon. The restaurant has a real Western-style décor — great atmosphere! We ordered the brisket, beef ribs, and pulled beef — all were excellent! The meat was tender and juicy, with a beautiful smoke ring — though the smoky flavor could be a bit stronger. The four side dishes were also delicious — the mac and cheese was rich and creamy, and the coleslaw and beans were perfectly balanced. I understand that making authentic Texas barbecue takes a lot of patience, skill, and above all, ongoing passion — it’s not easy! Especially now, with the high cost of quality beef, it’s even more impressive. The guy and girl at the counter were both very friendly and professional! Best of all, they’re open all day — we’ll definitely come back again!
This is not a place my wife and I would typically go. However we had a coupon that was three meats and four sides for 20 dollars. I don’t have anything bad to say. There was super friendly staff! The ribs fell right off the bone. The meat was seasoned perfectly. The Mexican street corn is the best ever. What such a wonderful place!
Actually tasted all the brisket from other local BBQ places and found Soarks to be the best. The peppery flavor and perfect smoke wins! Also the Mac and cheese is tasty! Always grated with a smile. Impressive a I live 800 miles away and the staff always remembers me. Love the feel of a small town restaurant with skilled smokers. Keep it up guys!! I'll see you in a couple weeks.
